Earl Grey Tea Cookies

Earl Grey’s distinguishable profile lends itself to be used as flavorings in cakes, cookies, and chocolates. These cookies have become my go-to when I’m craving for something sweet and nibbling on them reminds me of my time in the UK. They’re very easy to make and requires just 5 ingredients. It’s very hard to mess up, and requires everything you may already have.

Makes half dozen cookies:

Ingredients

1/2 cup or 1 stick of unsalted butter (room temperature)

1/4 cup of confectioners sugar

pinch of salt

dash of vanilla extract (optional)

1 cup of all-purpose flour

1 tablespoon of finely ground earl grey tea leaves

Instructions

  1. Combine butter, vanilla extract, and sugar into a mixing bowl until creamy.
  2. Then add in flour, tea leaves, and salt. Don’t be afraid to get your hands in there and combine until it starts to form a dough.
  3. Shape dough into a log and wrap it in saran wrap or parchment paper. Chill in the fridge for at least an hour.
  4. Preheat oven to 350°F. Take the dough out of the fridge and cut into 1/3 inch disks and lay them each 1” apart on a cookie sheet. Tip: I use a strand of thread to cut instead of a knife.
  5. Bake for 12-15 minutes or until golden. Let it cool for 5 minutes.
